Top 10 New Year’s Resolutions – Disney Style

Happy New Year Disney Fans!  I’m thankful for all the new friends I’ve made this year and appreciate every one of you for choosing to stop by here and join me in my Disney life.  To ring in the New Year properly, I think it calls for a declaration.  Ladies and Gentlemen of the Earhat-wearing variety….I give to you my Top Ten New Year’s Resolutions – Disney Style:

  • Muppets Most Wanted (3/21/14) – Been a huge fan my whole life – this is a can’t-be-missed movie for me!  The unresolved romance between Kermit and Piggy keeps me coming back for more.
  • Captain America:  The Winter Soldier (4/4/14) – I’m diggin’ all the Marvel movies and I think the Cap’s aces.
  • Million Dollar Arm (5/16/14) – I am just a girl who cannot resist a good baseball movie.
  • Maleficent (5/30/14) – Looks darkly intriguing – I think we will love to hate her!
  • Into the Woods (12/25/14) – Have heard so much about this show – can’t wait to see it!

2.  Book a Cruise – I’ve got a place-holder (aka “dummy”) cruise burning a hole in my pocket.  Since August when we re-booked onboard (while sailing on the Magic in the Mediterranean) – We are anxiously waiting to DSCN0685see what the rest of 2015’s sailings look like before making a final decision.  Wishing for Baltic (tie in to Frozen).

3.  Attend Mickey’s Not So Scary Halloween Party – I have wanted to do this forever.  2014 is the year!

4.  Buy a Fancy New Earhat – sounds easy enough, but I have the most difficult time deciding on one – I always walk away with a Disney baseball cap instead.  Not this year.  No, sir.

5.  Eat This Food – I’m up for passing up old favorites and trying out some new places in 2014.  I’m thinking about these:

  • Be Our Guest – I know, right?  Everyone’s clamoring to get in there – I’ll be lucky to score a visit, but I’ve heard so much great stuff about it.  I’m at least resolving to try my best to get in!
  • Flying Fish – I’ve never eaten here.  Chime in if you think I should ditch this plan in favor of something else.
  • 1900 Park Fare – For a character meal it has always been Chef Mickey’s but now that we have “adult” children, I thought Lady Tremaine and the Steps might be a bunch of fun.
  • Hollywood Brown Derby – We have never eaten here and have always heard great things.  IMG_2382Even if we just sit in the new outdoor patio lounge – I’d like to give it a go.

6.  Find and Trade a Pin to Complete This Set!  I love pin trading and in 2014 I’m gonna be in-it-to-win-it!  Yeah, Baby!  Watch out flying Orange Bird – you are mine!

7.  Ride the Seven Dwarfs’ Mine Train – Ugh.  Feels like the Fantasyland expansion has been going on forever!  I am riding this ride, dadgummit – get out of my way.

8.  Try These Recipes:  (You may have seen my other posts on cooking Disney food here and here and here)  I like to cook – why not make it Disney food?  Thanks to AllEars.Net for the recipes.

9.  Try a Dole Whip:  They say confession is good for the soul – so now you know my darkest Disney Secret (one of them anyway)…I hid it way down here at #9 so maybe no one will notice.  I have never eaten a single bite of Dole Whip in my life.  Don’t judge me.

10.  Take Better Disney Pictures!  To my shame, my Disney pictures are mediocre at best.  The great computer crash of 2009 cost me dearly and I just need to learn to be a better photographer overall.  I buy really small cameras because they’re easy to carry.  I’m not sure if I’ll actually dish out more cash on yet another camera, but I’ll do what I can to make the most of what I’ve got.  Promise.

Saturday Salute – Disney’s Liberty Tree Tavern Dressing

IMG_2265Liberty Tree Tavern is a restaurant located in Liberty Square at Disney World’s Magic Kingdom park.  Diners there for lunch or dinner enjoy traditional American fare amid Colonial themed décor.  Offerings include such dishes as “Declaration Salad”, “Liberty Lamb Stew”, “New England Pot Roast”, and “Pilgrim’s Feast” (includes cornbread dressing) to name a few.  Reviews (available at many websites) for Liberty Tree Tavern are mixed – If you want to give it a try, I recommend lunch as your best bet for a good experience.  

Leading up to Thanksgiving I saw several of my favorite Disney sites post Liberty Tree Tavern’s dressing (aka stuffing, but mine would not be going in the turkey) recipe and I thought, what the heck – looks easy enough – why not give it a try.  So while my little turkey was in the oven, I threw a batch together. 

I made a double batch of cornbread the night before (using Fisher Cornbread Mix).  After it cooled, I crumbled it up and stored it overnight in a gallon bag before toasting the crumbs in the oven per the recipes instructions on Thanksgiving morning.

You can find the recipe I used here at allears.net (excellent resource for all things Disney).  I cut it in half since my 2 batches of cornbread ended up at about 6 cups of crumbs.  It was very easy indeed.  If you’re looking for a cornbread dressing recipe, this one would be excellent for beginners – I’m sure store-bought, pre-made cornbread would work just as well as baking your own. I baked my dressing in a 9″x13″ pan for 45 minutes at 325 degrees (slipped it in alongside the turkey as it was finishing up) and it turned out great.  Well seasoned, great texture, not too soggy.  Raymond, always willing to be a taste-tester for me, gave it a two-thumbs-up.

Saturday Salute – Boma’s Chicken Corn Chowder

If you ever have the opportunity to eat at the Animal Kingdom Lodge, jump on it!  We eat there every time we’re at Disney World and have enjoyed every single bite.

The lobby of the Animal Kingdom Lodge is worth a visit even without the delish food!  It’s HUGE and themed extremely well.  PLUS, you can walk right out onto the savannah for a look at the many different African animal species that roam all around the Lodge.  You know how I feel about Kilimanjaro Safari, so you can just imagine how much I like the savannah overlook area.  There is usually at least one castmember from Africa out there to answer any and all questions you might have about their homeland.  Raymond and I spoke to a young man from Botswana for quite a while one evening and enjoyed hearing him talk about Africa and what it was like growing up there.  Topsy from South Africa was there on our last visit.  She was so funny when we introduced her to Perry the Platypus.

Okay, back to the food.  We’ve eaten at The Mara (quick service), Boma (buffet) and Jiko (table service), but I’m sure Sanaa (maybe next visit) is equally as fabulous.  It’s Boma and Jiko that keep us coming back – the food is unlike any other found at a Disney World resort and the service is always top notch.

Let’s just focus our taste buds on Boma.  The African-flavor-inspired dishes on this buffet are so plentiful, everybody finds something to love.  As with all Disney buffets, there are plenty of options for less-adventurous diners like mac-n-cheese and pasta.  Boasting an impressive variety of salads (oh, that watermellon rind salad is to die for!), several soups (thus, today’s Salute!), and main dishes (rice dishes, ribs, chicken, beef at a carving station, and much more)  to choose from.  And lets not forget about dessert and Boma’s famous Zebra Domes (little striped cake bites from heaven)!

I found the recipe for Boma’s Chicken Corn Chowder at Magical Recipes.  The weather here has finally cooled off a bit and that always puts me in the mood for soup.  We (Raymond and I of the empty nest) particularly like this soup because it’s not only satisfying, but it has a spicy kick that makes it not-just-another chowder.  Bread and a side salad make it a meal.  Since this post is a tribute to Boma’s recipe, I made it exactly as written.  I did specifically use Tobasco brand sauce because to use anything else in Lousiana is at least a sin (if not illegal).  The result?  Mmmmmmm…Good!
